I made The Pioneer Woman’s Pig Cake

I wish I had a better picture for y’all but this is all I have.  I took it to send to my sister in a text, showing her that I did INDEED make the The Pioneer Woman’s Pig Cake 

 Oh my goodness, y’all!  This is the cake of all cakes!  It’s the QUEEN of Cakeland!  It is so delicious it defies description!  It’s PERFECT for Spring/Summer time!  Heck, it’s perfect for ANY time!! 

For my birthday my sister Kari made me a PW Pig Cake.  So sweet right?  She actually used sugar free pudding, mandarin oranges and pineapples in light syrup and it was JUST AS DELICIOUS!!! 

Yep, I’m 38!! But it’s OK, I still act like I’m 22!!

 See, I told y’all this cake is so amazing that it is still amazing even low-cal!!!

1 box (18.25 Oz. Box) Yellow Cake Mix

1 stick Margarine (softened)

1 can (14 Oz. Can) Mandarin Oranges, Drained, 1/2 Cup Juice Reserved

4 whole Eggs

1 teaspoon Vanilla Extract


1 package (4 Oz. Box) Vanilla Instant Pudding Mix

1 can (20 Oz. Can) Crushed Pineapple, Juice Reserved

½ cups Powdered Sugar

4 ounces, fluid Frozen Whipped Topping (such As Cool Whip)

Extra Mandarin Orange Slices, For Garnish


    Preparation Instructions

    Preheat oven to 350 degrees. For the cake, combine cake mix, margarine, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for four minutes on medium-high. Add drained oranges and beat again until pieces are broken up and small. Pour batter into greased and floured 9 x 13 inch baking pan and bake for 25 to 30 minutes, or until golden brown and set. Remove from oven and cool completely. If desired, turn out cake onto a large platter.
    Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping. Stir in drained pineapple. Spread on cooled cake and refrigerate several hours.
    To serve, cut cake into squares and top each square with a mandarin orange slice.

    Now, I mentioned that my sister made me the PW Pig Cake for my birthday.  I thought I would share a few pictures of my birthday.

    I still feel new to AZ and after living all my life in TX, I’m still not over how amazing mountains really are.  I love them.  Out here some are just beautifully colored rock, some are covered in cacti and some are covered with all kinds of interesting desert plants.  We love to go hiking.  We love it so much, Alie asks to go hiking nearly everyday.  

    For my birthday my family planned a little picnic at North Mountain. This is where we picnicked.
     My hubby, my Alie, my sister Kari and her bf Charlie, my brother Jaddy, his wife Julie and their son Jayden all planned this for me! Hubby made the MOST DELICIOUS turkey burgers.  Everyone brought all kinds of yummy stuff to munch on. And Kari made the DELICIOUS cake! 

    Alie and Jayden had so much fun just playing in the sand.

     After we ate we all went on a nice hike.  The weather was PERFECT!!  We took the easy trail for the kiddos.  I have to tell y’all, Alie can handle those moderate trails pretty well in her super cool green hiking boots! 

    I HAD to share this one with y’all.  That is my brother!! HA!!
     It was such a great day!!  My sis sent me home with the rest of the cake.  She even packed up some extra mandarin orange pieces for me!!  This was my piece for my late night b-day treat!!

    WOW!!!  What a year.  I started this blog on January 6 this year.  I had NO IDEA what I was doing.  With that and a computer that died on us I really didn’t get things going until June.  So even though my anniversary is coming up it really does not feel like one.  To me it really feels like this all began in June.  So with that I have complied a list of the best of AliLilly 2010!!!  So exciting!!  I have a best of list!!  WEEE! *big happy smile*  I based this list off of comments and features.

    SO YUMMY Pumpkin Bars

    This is going to be the EASIEST Terrifically Tasteful Thursday recipe post ever!! Which means if y’all follow this, it will be SUPER easy for y’all too!

    The bars were DELICIOUS!!! There is a recipe for Pumpkin Cheesecake on the box as well. Now, I have my very own Pumpkin Cheesecake recipe that is a FAMILY FAVORITE. BUT, I am DEFINITELY trying this one out too!

    SO YUMMY! The crust is gingerbread cookies!!
    I could have added some whip cream and sprinkled some nutmeg to make it pretty. I didn’t intend on this being a recipe post. BUT after the first bite I decided I HAD to share this one!! If you try it I would love to hear what you think. Thanks for stopping by today! 🙂

    Fantastically Delicious Turkey Burgers

    I made these burgers for my family a few weeks ago.  David told me they were “fantastic” and then proceeded to ask me where his second burger was!  They really were DELICIOUS!  So I made them again and decided I just HAD to share them with y’all.  I bought this seasoning from Big Lots.

    If you can find it, BUY IT!!!!  It’s AWESOME!!  I think it’s the little kick that takes these burgers up to the FANTASTIC level.  If you can’t find it use your favorite BBQ seasoning.

    You will need
    • 1 pound of ground turkey
    • hamburger buns
    • sliced sandwich cheese
    • lite mayo
    • salt
    • pepper
    • BBQ seasoning
    This makes about 4 medium sized (aka NOT Red Robbin sized) burgers.  Season your ground turkey with BBQ seasoning. I used about 2 tbsp.  Then I formed my meat into patties slightly larger than the buns.  This way as they shrink from cooking you don’t end up with a lil silver dollar sized patty inside your buns!  Cook them in a skillet over med-high heat for about 5 minutes per side.  Add a few sprinkles of salt and pepper to each side of the burgers as they cook.  After they are cooked place cheese slices over the patties cover your skillet and remove from heat.  While your cheese is turning into oooey goooey goodness, toast and lightly butter the buns.  I also spread some lite mayo on mine.  Place your cheesy covered turkey patty into the buns and serve!  I served mine with a salad.  I’m a bit proud of myself for doing that…..I wanted to fry up some salty hot fries SO BAD!     Homemade Chicken Taquitos and Spanish Rice

    I am super excited to share this recipe with you today!  It is really easy and SUPER DELICIOUS!!  I know I have mentioned before about my LOVE for Tex Mex.  Well here is a GREAT, EASY, and INEXPENSIVE recipe for making Taquitos and Spanish Rice.

    You will need:
    • a pack of corn tortillas. white tend to be easier to work with.
    • 2 lbs of bone in chicken. any cuts work.
    • 12 oz or larger jar of salsa. any kind you like.
    • 2 cups of rice
    • dried bay leaf
    • salt
    • pepper
    • vegetable oil
    First, boil your chicken in a large pot with a few teaspoons of salt and a dried bay leaf.  You will need to boil the chicken for about 45 minutes or longer.  The longer you boil the more shredded the chicken becomes.  I used a few leg quarters when I made this batch.  Once your chicken is done drain it and set it aside to cool down.
    Now, we start on the rice.  Brown your rice in 2 tablespoons of oil over med heat.  Brown it just until it’s a nice golden tan color.  Now, cook your rice according to package instructions but add half the jar of salsa (6oz.).  Set a timer for your rice so you do not forget about it while your preparing your taquitos.  While your rice is cooking, begin to pull your cooked chicken off the bones and shred it.  In a large bowl mix chicken with a little salt and pepper to taste and about 3 ounces of salsa.  
    Place enough oil to cover the bottom of your skillet and heat over med to med-high heat.  The oil should shimmer when it is ready.  Take about 6 tortillas at a time and microwave them for about a minute or two (depending on your microwave wattage).  Microwave your tortillas with a damp paper towel on top.  Place your marinated shredded chicken down the center of  a warmed tortilla. Roll the tortilla and tuck the chicken in at the ends, this helps prevents the pieces of chicken from falling out while frying.  Place your taquito into the oil flap side down.  This keeps your taquito closed up.  Do this with just enough taquitos to fill your skillet but not overcrowd it.  Flip your taquitos after just a couple minutes.  They will only need to fry for a couple minutes on each side.  You want them a light golden brown.  Place your cooked taquitos on a paper towel to drain.  
    At some point your rice will be finished.  Take it off the heat but do not touch it.  LID DOWN until it is time to serve.  Once taquitos are done sprinkle them with salt and serve them with the rest of your salsa, queso or guacamole.  Fluff your rice with a fork and serve with your taquitos.  Delicious, easy, and they taste better than any taquito I have ever had at a Mexican Restaurant!  I promise y’all they do!!  Enjoy and please let me know if you tried this and how it worked out for you and your family.  Enjoy!!

    Oh My!! Bananas and Chocolate Chip Pancakes!!

    I thought I would post a quick super simple bananas and chocolate chip pancake recipe for y’all.  Ya know, to make up for Terrifically Tasteful Thursdays lack of recipe!

    OK, super simple. Are you ready? 
    • package of pancake mix
    • ripe bananas
    • semi-sweet chocolate chips
    • powdered sugar
    Cook your pancakes according to package directions. Mash your bananas. Mash one banana to one cup pancake mix. Heat your griddle or fry pan. I spray mine with a light layer of PAM. As soon as you spoon your pancakes into your pan sprinkle a few chocolate chips in the batter cooking in the pan. 

    Once your pancakes are all cooked sprinkle them with powdered sugar and serve. 

    See, super simple yet SUPER DELICIOUS!!

    Delicious Chicken Fried Steak with Homemade Gravy

    This is my take on Alton Brown’s Chicken Fried Steak recipe. I made this for David on Father’s Day. He told me it was the BEST chicken fried steak he had ever had. I have made many different variations of chicken fried steak.  I agree with David, this is the best one I have ever made.

     You will need :

    •     about 2 pound beef steak cubed
    •     2 teaspoons salt
    •     1 teaspoon ground black pepper
    •     1 teaspoon paprika
    •     1 teaspoon garlic powder
    •     1 cup all-purpose flour
    •     3 whole eggs, beaten
    •     about 1/4 cup vegetable oil or enough to cover the bottom of your skillet
    •     2 cups chicken broth
    •     1/2 cup whole milk
    •     1/2 teaspoon fresh thyme leaves

    Now, preheat your oven to 200 degrees. Get yourself 2 pie dishes or large platters and a large bowl for the egg batter to dip steaks into.  Make sure it is big enough that steaks will fit into the bowl.  Get out a small mixing bowl and mix flour, salt, pepper, paprika, and garlic powder.  Lightly season the cube steaks on both sides with salt and pepper.  Growing up, we always called this tractor meat, because it looks like it was run over by a tractor.  Now, place a few spoons full of the flour into a pie pan.  Beat your eggs in the other pie pan.  Dredge the meat on both sides in the flour.  Then dip your steaks into the eggs and then back into the flour again.  Add spoonfuls of the flour mixture as you need it.  Do this with all the pieces of meat.  Place the meat onto a plate and allow it to sit for 10 to 15 minutes before cooking.

     Place enough vegetable oil to cover the bottom of your skillet.  When the oil begins to shimmer, add the meat, being careful not to overcrowd the pan.  Cook each piece on both sides until golden brown, about 4 minutes per side.  Take out your steaks and place on a wire rack.  I place them directly onto the rack in my oven with a cookie sheet on the bottom rack to catch the drippings.

    Do this next step only if you need to.  I have found that sometimes I need to add some oil and sometimes I have too much oil.  You want what looks to be about 4 tablespoons of oil left in the pan after frying.  If you need to add the remaining vegetable oil to the pan.  Begin to whisk in 3 tablespoons of your left over flour.  Then add the chicken broth and deglaze the pan.  Deglaze means to mix in all those great little crispy bits of flour and meat juices left behind from frying.  Whisk until the gravy comes to a boil and begins to thicken.  Add the milk and thyme and whisk until the gravy coats the back of a spoon, approximately 5 to 10 minutes.  Serve gravy over steaks.  Gravy is also fantastic on top of mashed potatoes.  I have a GREAT homemade mashed potato recipe.  I may have to share that one with y’all someday soon.  Now, I scrape up and save every last drop of this gravy.  It is great on biscuits or toast.  Great with sausage or bacon mixed in.  I hope you enjoy this recipe.
